This week on Chef 2 Go, chef Rabar and the crew headed to the Cook and Brown Public House, located on the East Side of Providence.  Here, Nick, along with head chef, Nemo Bolin, prepared the fresh fish and seafood netted by the folks of the “Local Catch” (with help from none other than our own Nick Rabar!). This week, Chef 2 Go landed at the Vanderbilt Grace hotel, located in scenic Newport. Here, chef Rabar visited with renowned New England chef, Jonathan Cartwright, who in June of 2011 launched “Muse by Jonathan Cartwright” inside the opulent mansion turned hotel.

Built in 1909 by Alfred Gwynn Vanderbilt, the 33 room Vanderbilt Grace is both modern and elegant, while still offering a taste of an old-world charm singular to Newport.

The historic lodging also boasts an impressive bar and dining room as well as a spa, indoor pool, and terrace.

The Thursday morning shoot began in the kitchen of the “Muse by Jonathan Cartwright,” where chef Cartwright along with his experienced staff, prepared a signature of the former Maine resident; butter poached smoked Kennebunkport lobster.

Next, chef Rabar sat down with chef Cartwright in the hotel’s lavish dining room, which included among other extravagances, thousand dollar candle settings at each table.

There, the chefs discussed cooking ideologies and the future of the restaurant as they enjoyed the succulent lobster dish, which arrived at the table amidst a cloud of smoke.

Concluding the day, chef Rabar joined hotel manager Matt Parent in the hotel’s rose garden for a look at the inner workings of the hospitality and restaurant business.

“Muse by Jonathan Cartwright” is open Monday through Thursday from 6pm-9pm as well as Friday and Saturday from 6pm-9:30pm. The prix fix menu features four ($75/person) and five ($95/person) course offerings that showcase seasonal, local ingredients.

With food truck fever at an all time high across the nation, it was only a matter of time before this budding trend landed in the Ocean State.

Over the past year, a developing fleet of these mobile eateries have hit the streets of Providence, gaining popularity with both students and urban professionals in search of quality food in a hurry.

In a sea of traditional American fare, one truck stands apart from the rest, Mama Kim’s Korean BBQ. With a dedicated following and stellar reputation amongst local foodies, Chef Nick Rabar couldn’t think of a better place to learn about this dynamic, yet little-known cuisine.

During the nearly four hour shoot, which took place in downtown Providence, Chef 2 Go took a look inside the small but impeccably organized portable kitchen. While learning the fundamentals of Korean cooking, Chef Rabar observed first hand how owner and manager Hyun Kim, along with a talented staff of up and coming chefs, handled rush hour lunch on the busiest day of the week.

Brimming with the freshest local ingredients, including Portuguese sweet rolls from the Season 3 featured Silver Star Bakery, Mama Kim’s successfully served up order after order of the best Korean BBQ wraps and sliders around. Chef Rabar was so impressed by the mouth-watering menu; he even snagged a hefty order to-go.

Mama Kim’s colorful yet down-home feel continues to attract a varied clientele, many of whom are sampling Korean eats for the first time. And with exceptionally affordable pricing (ranging from $2-$8), the “Seoul food” experience can be enjoyed by all. “Chef 2 Go” host Nick Rabar threw a fantastic party to celebrate the opening of his new restaurant, “Avenue N American Kitchen” in East Providence. The food and drink flowed as Nick and his wife Tracy proudly debuted their labor of love to friends and family.
